I was making a few lasagnas for some friends – one had a baby and the other had surgery. I was going to make one for Joy and me for dinner but ran out of the good stuff to put in it. All I had in the fridge was some leftover pot roast. So I made a lasagna with layers of ricotta cheese, mozzarella cheese, and broken up chunks of leftover Pot Roast. Joy came home and when I served it she looked upset – because she hates pot roast. I said please just try it. I looked up 5 minutes later and she demolished the whole plateful! She said, “That was the best lasagna I ever had”.
